I twitted the other day that I made a cake for Valerie's birthday.




We went for hotpot + Korean BBQ buffet (again)!



It was my first attempt on a no-bake cheesecake and was a success!!!

I wanted to literally BAKE a cheesecake as I'm more familiar with that but decided to give the no-bake recipe a try. It didn't fail me!





This is what I call: The Princessy Oreo Cheesecake



A no-bake cheesecake is one which doesn't require any baking if you haven't know. Usually uses gelatin to semi- solidify the cake without the process of baking. So for people who do not have any oven at home, could consider a no-bake recipe.




Here is the recipe:



OREO CHEESECAKE




What you need:


1.   12 pcs Oreo cookies, finely crushed (for crust)
2.   10 pcs Oreo cookies, crushed (for filling)
3.   2 blocks 250g Philadelphia cream cheese
4.   1 cup whipping cream
5.   50g butter, melted
6.   3/4 cup caster sugar
7.   3 teaspoons gelatine
8.   2 tablespoons lemon juice
9.   20cm springform pan










How to:

 

1. Bring cream cheese out to soften to room temperature (at least 1 hour).


2. Crush Oreo cookies in a ziplock bag with the back of the rolling pin.


3. Melt butter in a bowl over a larger bowl of boiling water.


4. Mix melted butter with crushed cookies (for crust) and press firmly into the bottom of the springform pan with the back of a spoon or measuring cup. Chill.


5. Dissolve gelatin with 1/4 cup of boiling water. Stir until completely dissolved.


6. Whip whipping cream in a mixing bowl over a larger bowl of ice water (to prevent the cream from melting into water or turning into butter form).


7. Beat softened cream cheese and sugar with a whisk / electric mixer until smooth and creamy. Fold in lemon juice, dissolved gelatine, whipped cream and crushed cookies (for filling).


8. Pour filling into the prepared crust. Refrigerate 4 hours or until firm.
